But the taste...<br /><br />2abes - a little of both.<br /><br />Paticus - see comment for Mik above.<br /><br />Sybil - Basically here is what I did: Took a four pound bottom round roast. Jabbed a bunch of deep holes in it. Then marinated it in 1 cup of cider vinegar, 1 cup of red wine vinegar, 1 cup of water, some peppercorns, all-spice, cloves, chopped carrots, chopped onion and a bay leaf for 4-5 days. Then you remove the meat from the marinade, pat dry, dredge with a little flour and braise on all sides in a little vegetable oil. Then it goes in the oven at 375 for 3-4 hours in a covered Dutch oven or roaster pan along with the marinade. After it is done you remove the meat from the marinade to let cool. Then you drain the marinade and use the just the juice to make a gravy using gingersnap cookies to thicken the stock. Slice the meat against the grain (it will fall apart because it is so tender if you don't) and heap a generous portion of gravy on top. Choke it down with an Oktoberfest beer.
