Tuesday Taco Night

I think I've finally kicked my cold. Crossing my fingers. So to semi-celebrate I ran out to the market late this afternoon for all the fixings for Tuesday Taco Night.


It's an arbitrary assignment, this Tuesday of Tacos. But we did tacos last Tuesday night and we figured what the hell...let's make it a thing. I kinda like the sound of it too. Tuesday Taco Night.

I made some regular hard-shelled beef tacos and some chipotle pork tacos in jalapeno-flavored soft tortillas. Yeah, those were pretty fucking good if you ask me. Some cheese, some diced tomatoes and green chilies, some sour cream, some lettuce and green salsa. Yum. This stuff is pretty good too.

The secret with hard-shelled tacos, in case you were wondering, is to stuff the taco shell with meat (keep it clean folks) prior to heating them up in the oven. That way the juice/grease from the meat softens the shell a bit on the bottom and it keeps the taco together while you are eating it. Instead of shattering upon first bite.

  5. When I was a kid, we had taco night every Friday. Man oh man, did I love those old school 1970's tacos with the deep fried corn shell and all that yumminess!

  8. We don't bother trying to keep the hard shells together at our house. We melt a bunch of cheese into refried beans and then cover a small flour softshell with the beans. then wrap that around a hard shell taco made like normal. Thus begets a double decker taco.

    The Lord saw it, and it was good.

    Slyde - Oh no it isn't. Have you forgotten about a little joint named Los Compadres on Old Walt Whitman Road? It's still there. Serving up some of the finest tacos in the land this side of Casa de Earl. They even have that tongue taco you love so much.

  19. I never really liked hard tacos. Precisely because of the whole coming apart in two thing the second you bite it. Funny you should have mentioned Tacos as I made some for a family dinner last night.

    My secret is to sautee 1/4 ground pork with 3/4 ground beef and then to season the whole thing not with Taco seasoning, but with...wait for it...spanish menudo or afritada spices. Yummmmmyyy.

  23. Ironically, I chose NOT to get tacos because I always have tacos back home. Went for other dishes outside my comfort zone and thoroughly enjoyed them.

    I think you and Gia should visit...

    Oh, and the 4 of us should go for tacos and beer some night. :D
